Cocentaina has always breathed the Mariola air mixed in with the aromas from the olive groves, plants and herbs of the sierra. This close bond between the mountain itself and the farmers who cultivate the land has bred a feeling for the natural world and a timely return to age-old practices with a due respect for the countryside and the environment.
On this trip, we will enjoy the scents of the Sierra de Mariola from the Paraje Histórico de San Cristóbal hermitage with views over the Foia de Cocentaina while enjoying the exquisite flavour of olive oil from the Cocentaina Catholic Farmers Cooperative, which has a history going back 75 years.
We will have breakfast at the Bodega de l'Almàssera where we will attend a master class on perfect oil pairings and their various essences.
Afterwards we will go up to the Paraje de San Cristóbal hermitage, a site packed with history and legend, where we will also learn about the varied plants that grow around the Sierra de Mariola and their medicinal and culinary uses.
We will visit the Ethnology Museum to learn how they made wine, oil and flour in the old days, and end with an informative and interactive lesson on the most traditional and authentic of products, olive oil, and the agricultural artisanship proudly maintained by the Cocentaina Catholic Farming Cooperative.
We will end with lunch at the Restaurante L'Hostalet, where we will sample the aromas and flavours that have accompanied us throughout the route: with plates of pericana, olletta and tostons followed by exotic Moorish desserts and a glass of the famous Serra de Mariola herbero liquer.
